Simple Summer Dishes to Keep You Cool

When the heat turns up in Oklahoma, it can be hard to even think about turning on the stove! That’s why we rounded up our favorite summertime dishes to help keep you cool. All of these recipes have little to none stovetop cooking time and are all served cooled!

Shrimp Ceviche

This recipe has a total stovetop time of only 2 minutes! The only thing you need to cook is the shrimp. This is a great make-ahead recipe and is delicious served over salad greens or with multigrain tortilla chips. To avoid cooking time completely, use precooked shrimp!

Salmon Salad

Salmon Salad comes together just as quickly as your classic tuna salad! Fat-free honey mustard provides a hint of sweetness while the diced bell peppers and celery add the perfect crunch. Try it on a sandwich or with multigrain crackers and serve with fruit for a complete meal!

Curried Egg Salad & Cucumber Sandwiches

The only heat you need for this recipe comes from toasting your bread- but feel free to skip this step and serve with multigrain crackers instead! 

Summer Greek Salad

There’s nothing like a cool, crisp salad on a hot summer day! This recipe includes a homemade red wine vinaigrette, too! Add a can of rinsed and drained no-salt added garbanzo beans for a quick no-cook protein source to round out this meal. 

Fresh Tilapia Tostadas

This recipe calls for oven use, so it is easy to walk away from the heat and come back when it’s time to toss the remaining ingredients together. The tostada mixture is allowed to cool before serving, making it great to put over salad greens or a tortilla!

Avocado Tuna Salad

Step-up your tuna salad by adding avocados rich in healthy fats, fiber, and potassium! The healthy fat and fiber content helps to keep you fuller for longer. Serve this as dinner during the week and have leftovers ready for lunch the next day!

Cheeseburger Salad Bowl

You only need up to 10 minutes at the stovetop for this recipe! Ground beef is set to cool before tossing the remaining ingredients together. This salad works great over any type of lettuce!

Broccoli Salad

A healthy take on the picnic classic! Using olive oil based mayonnaise helps to support heart health. Add a can of drained chicken as a source of protein to make it a complete meal without turning on the stovetop!
