One of our favorite 30-minute recipes is Easy Skillet Lasagna. This tasty recipe has everything you need to make a quick and easy (and healthy!) week-night dinner.
One-pot
Not only does this recipe only take 30 minutes to make, but it is also quick and easy to clean up! This recipe only needs one skillet to prepare. All the ingredients are added directly to the skillet so there is no need for additional mixing bowls. There is no waiting for water to boil to cook your pasta because the dry lasagna noodles are cooked in the skillet as well. Serve this dish directly from the skillet onto your plate to save even more time on clean-up!

What makes this recipe healthy and delicious is its simple ingredients. Easy Skillet Lasagna is made with 4 of the 5 main food groups. It is packed with protein from the lean ground beef, which will keep you fuller for longer. This recipe also comes with a variety of veggies – onion, zucchini, and tomatoes! Varying your veggies is important because different vegetables provided different essential nutrients. Shredded mozzarella cheese serves for the dairy group and whole-wheat lasagna for the grains. If you want to add fruit to this meal, try slicing up your favorite fresh fruit and serving it in the middle of the table for everyone to reach.
Here are the 10 simple ingredients:
- 1 lb 90/10 lean ground beef
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 large zucchini, cut in half & sliced
- 1 (8 oz) carton sliced fresh mushrooms
- 2 (15 oz) cans no-salt-added tomato sauce
- 1 (14.5 oz) can no-salt-added diced tomatoes, undrained
- 1/4 cup minced fresh basil
- 5 oz whole-wheat lasagna pasta
- 1 1/2 cups shredded part-skim mozzarella cheese
Easy Steps
Easy Skillet Lasagna is as easy as 1, 2, 3… 4! Here are the steps:
1. Heat a large skillet over medium-high. Add beef, onion & garlic. Cook 4-5 minutes, crumbling meat throughout.
2. Add zucchini & mushrooms. Cover & cook 4-5 minutes or until beef is cooked through.
3. Stir in tomato sauce, tomatoes & basil. Break pasta in half & press into sauce. Spoon tomato sauce over pasta until covered. Cover & simmer 15-20 minutes or until pasta is al dente.
4. Top with cheese & serve.
