- In a large slow cooker add oil, chicken, Italian seasoning, mushrooms, onion, garlic & broth.
- Cover & cook on LOW 3-4 hours.
- Stir in orzo, cover & cook another 30 minutes on HIGH.
- Shred chicken on top of orzo mixture. Sprinkle parmesan cheese over chicken. Cover & cook 5-10 minutes, or until cheese is melted.
- Serve topped with tomatoes & thyme!
