Preparation
- Prepare rice according to package directions. Fluff with fork & set aside.
- In a large deep skillet, heat oil over medium-high. Add chicken, onion & garlic. Sauté 5-7 minutes or until chicken is cooked through & onions are tender.
- In a measuring cup, add orange juice, honey, soy sauce & ginger. Stir until combined completely. Pour mixture into skillet, reserving a tablespoon of liquid. Reduce heat to medium & simmer 5-7 minutes or until sauce starts to thicken. Add cornstarch to measuring cup & set aside.
- Add stir fry mix, cashews & cornstarch mixture. Cook 5-7 minutes or until vegetables are cooked through & sauce has thickened. Serve over rice.
