- Prepare rice according to package directions. Fluff with a fork & set aside.
- In a large deep skillet, heat oil over medium. Add chicken, garlic & taco seasoning. Sauté 5-7 minutes or until chicken is cooked through, stirring occasionally.
- Reduce heat to medium-low. Add salsa, beans & corn. Cook 4-5 minutes or until warm. Remove from heat & stir in yogurt.
- Serve over rice topped with cheese & cilantro.
