- Cook rice noodles according to package directions. Set aside.
- In a large skillet, heat oil over medium-high. Add chicken & half of onion. Cook 5-7 minutes. Add peppers, carrots & garlic. Cook 4-5 minutes, stirring occasionally.
- Push chicken & vegetables to one side of skillet & add eggs on opposite side. Cook 2-3 minutes, stirring to scramble. Once scrambled, stir to combine.
- Add noodles, peanut sauce & water. Remove from heat & toss to coat. Top with peanuts, cilantro, remaining onion & lime juice.
