St. Patrick’s Day is Sunday and ONIE has some fun, easy, and tasty recipes you can make with your kids! An easy fruit rainbow with a delicious pot of gold; a fun leprechaun hat; and a filling leprechaun face peanut butter & banana sandwich. These recipes are the perfect full MyPlate meal and are quick, simple, and fun for the whole family.
To make the rainbow we used strawberries, orange cuties, bananas, green grapes, blueberries, and purple grapes! You can always switch out the fruit for what is in season or what you have on hand. The pineapple tidbits were used as the pot of gold and nonfat vanilla greek yogurt was used as the clouds. The yogurt also is a delicious dipping sauce for the fruit.
For the leprechaun hat we used just 3 simple ingredients: a yellow bell pepper, a cucumber and Provolone cheese slices. We halved the cucumber and separate the halves. Then cut the first half lengthwise to make the body of the hat. The second half was sliced and then sliced again in half moon shapes to create the brim. For the bell pepper we simply cut it into small squares to make the buckle for the hat. Lastly, the cheese slices were cut and laid on the cucumber as the band.
To make the leprechaun face you will need: whole wheat bread, peanut butter, banana, shredded carrots, and 2 blueberries. A cup was used to cut two circle shapes for the leprechaun’s face. Then spread some healthy, protein packed peanut butter on the sandwich bread. We added banana sliced that were left over from the fruit rainbows to the sandwich and added one last slice for the leprechaun’s mouth. Shredded carrots were used for the leprechaun’s hair, beard, and eyebrows. The 2 blueberries are for the eyes of the leprechaun.
