1. In a large stockpot heat oil over medium. Add onion & pepper mix, celery, carrot & garlic. Cover & cook 10 minutes, or until vegetables are tender.

2. Add chili powder & peppers. Cook 1-2 minutes, stirring throughout.

3. Add tomatoes & broth. Bring to a boil.

4. Add quinoa, beans & corn. Cover & simmer 15-20 minutes, or until quinoa is cooked, stirring occasionally.


Top with non-fat Greek yogurt for extra protein & flavor.
