1. Prepare rice according to packet directions. Fluff with a fork & set aside.
2. In a large skillet, heat oil over medium. Add onion & garlic. Sauté 2-3 minutes or until onion is tender. Stir in tomatoes. Cover & cook 7-8 minutes.
3. Add thyme, jalapeños, olives & vinegar. Cover & cook 3-4 minutes.
4. Add fish to skillet. Spoon sauteéd vegetables over fish. Cover & cook 5-6 minutes, or until fish flakes easily with a fork.
5. Serve over brown rice.
