Preparation
1. In a large, deep skillet, heat over medium-high. Add beef, garlic, oregano, cumin & chili powder. Cook 4-5 minutes, crumbling meat, stirring throughout.
2. Add onion & bell pepper mix, garlic. Sauté 3-4 minutes.
3. Add sweet potato, tomato paste, tomatoes & beans. Mix well. Reduce heat to low, cover & simmer 20 minutes, or until potatoes are fork tender, stirring occasionally.
4. Remove from heat & stir in cilantro.
5. Evenly divide chili into bowls, top with cheese & serve.
