1. Preheat oven to 375°F. Lightly coat a large glass baking dish with cooking spray.

2. In a large bowl, mix chicken, onions, jalapeños, thyme & garlic powder. Stir in cheese. Spread mixture evenly into baking dish.

3. In another large bowl, add cornmeal, baking powder & milk. Mix well. Stir in yogurt, eggs & corn. Spread evenly over chicken mixture.

4. Bake 30 minutes or until golden brown. To check, insert a knife in the middle. If ready, it will come out clean.


Make this recipe in 30 minutes. Bake in a muffin tin at 425° F 20-25 minutes.
