Preparation

  1. Preheat oven to 450°F.
  2. Cook rice according to package directions. Fluff with a fork & set aside.
  3. Lightly coat roasting pan with cooking spray then add chicken, peppers, tomatillos, garlic & jalapeños. Roast 30 minutes or until chicken is cooked through. 
  4. Blend cilantro, lime juice, and roasted tomatillos and garlic to create tomatillo sauce. 
  5. Serve shredded chicken and roasted bell peppers over rice topped with tomatillo sauce and yogurt.

Tips

Add Tortilla chips to give it a crunch!
