Preparation
- Preheat oven to 450°F.
- Cook rice according to package directions. Fluff with a fork & set aside.
- Lightly coat roasting pan with cooking spray then add chicken, peppers, tomatillos, garlic & jalapeños. Roast 30 minutes or until chicken is cooked through.
- Blend cilantro, lime juice, and roasted tomatillos and garlic to create tomatillo sauce.
- Serve shredded chicken and roasted peppers over rice topped with tomatillo sauce and yogurt.
