- Prepare rice according to package directions. Fluff with a fork & set aside.
- In a large skillet heat oil over medium-high. Add pork chops & sprinkle with garlic & pepper. Cook 4-5 minutes per side or until golden brown.
- Add pineapple, salsa & 1/4 cup cilantro. Bring to a boil. Reduce heat, cover & simmer 12-15 minutes or until cooked through, flipping pork chops halfway through.
- Serve over rice & top with remaining cilantro.
