1. Prepare barley according to package directions. Set aside.
2. Meanwhile, in large stockpot heat oil over medium. Add carrots & sauté 5 minutes.
3. Add onions & garlic. Sauté 3 minutes, or until tender. Add cooked barley, tomatoes, cumin, turmeric & pepper. Mix well.
4. Reduce heat to medium-low. Add broth, cover & simmer 8-10 minutes.
5. Stir in kale. Cover & cook 4-5 minutes, or until kale turns bright green.
