Preparation
- In a large stockpot, heat oil over medium. Add onion, celery, garlic, parsley & Italian seasoning. Sauté 3-4 minutes, or until onion is tender.
- Add turkey & cook 5-7 minutes, crumbling meat throughout, until cooked through.
- Add broth, water & crushed tomatoes. Bring to a boil. Add orzo & mushrooms. Simmer 8-10 minutes, stirring occasionally.
- Remove from heat & stir in spinach. Let cool 3-5 minutes & stir in milk. Serve topped with parmesan!
