  1. Preheat oven to 425℉. On a baking sheet, toss together shrimp, pineapple, onion, olive oil, chili powder, soy sauce & sriracha. Place in a single layer on pan & roast 6-8 minutes, or until shrimp are cooked. Turn oven to broil and broil 2-3 minutes, until pineapple is slightly browned. Remove from oven & set aside.
  2. In a blender, add yogurt, jalapeño, juice of 1 lime, honey & 1/4 cup cilantro. Blend until smooth.
  3. Toss together remaining cilantro, corn & lime juice.
  4. Add shrimp & pineapple onto warmed tortillas & drizzle with creamy jalapeño sauce. Top with cilantro, corn & avocado.

Tips
