Preparation

  1. Cook orzo according to package directions. Add 1 Tbsp mint, mix well & set aside.
  2. In a large deep skillet heat oil over high. Add onion, paprika & oregano. Cook 1-2 minutes.
  3. Add shrimp & tomato paste. Cook 10 minutes or until shrimp is cooked through. Add spinach & olives. Cook 1-2 minutes or until spinach is wilted.
  4. Serve over orzo topped with feta & mint.
