Preparation
- Cook rice according to package directions. Fluff with fork & set aside.
- In a large skillet, heat oil over medium-high. Add onion, garlic & thyme. Sauté 2-3 minutes.
- Add chicken & cayenne pepper. Cover & cook 5-7 minutes or until chicken is cooked through, stirring occasionally.
- Add tomatoes, okra, corn, bell pepper & broth. Cook 7-8 minutes or until peppers are crisp tender, stirring occasionally.
- Remove from heat & serve over rice.
