- In a large stockpot, heat oil over medium-high heat. Add pork, chipotles & garlic powder. Cook 4-5 minutes, until browned on all sides. Remove pork from pan & set aside.
- In the same stockpot, add bell peppers & onion & cook 3-5 minutes until soft. Add tomatoes & broth. Bring to a boil, then stir in beans & corn. Reduce heat & simmer for 5-10 minutes.
- Add oregano & pork back into pot. Simmer 5-10 more minutes, until stew is slightly thickened. Divide into bowls & serve.
