Preparation
- In a medium bowl add pepper flakes, oil, vinegar, garlic, herbs & pepper. Set aside.
- Prepare rice according to package directions. Fluff with fork & set aside.
- In a large deep skillet, heat oil over medium. Add chicken & onion. Cook 5-7 minutes or until chicken is cooked through.
- Add tomatoes, peas & rice. Sauté 3-4 minutes, stirring throughout.
- Pour chimichurri over skillet & toss to combine.
- Top with yogurt & fresh herbs.
