Preparation
- Preheat oven to 400℉. Cut four sheets of foil, about 12 inches long.
- In a small bowl, combine mozzarella, basil, tomatoes, 2 Tbsp vinegar & 1/2 tsp pepper. Gently mix & set aside.
- Divide zucchini & yellow squash into center of each foil. Drizzle olive oil & sprinkle Italian seasoning & pepper over squash. Set aside.
- Cut a large slice halfway into each chicken breast, to make a pocket for filling. Divide tomato mixture between four chicken breasts.
- Place stuffed chicken breasts on top of squash. Drizzle with olive oil & Italian seasoning. Fold up all sides of foil to close the packets. Place packets on large baking sheet & bake 25-30 minutes, or until chicken is fully cooked. Let cool 5 minutes before opening.
- Drizzle chicken with extra balsamic vinegar before serving
