1. Preheat oven to 425℉. Cut four sheets of foil, about 12-inches long. 
  2. In a large bowl, add all ingredients except for parsley & lemon. Gently mix to combine. 
  3. Divide mixture into to center of each foil. Fold up all sides of foil to completely close the packets. 
  4. Place foil packets on a large baking sheet & bake 30 min or until potatoes are fork- tender. 
  5. Serve topped with fresh parsley & lemon!


Swap out frozen corn for fresh corn on the cob when in season!
