- Preheat oven to 425℉. Cut four sheets of foil, about 12-inches long.
- In a large bowl, add all ingredients except for parsley & lemon. Gently mix to combine.
- Divide mixture into to center of each foil. Fold up all sides of foil to completely close the packets.
- Place foil packets on a large baking sheet & bake 30 min or until potatoes are fork- tender.
- Serve topped with fresh parsley & lemon!
